There is little to no Mexican food in South Africa so I had to learn a lot of cool words like tortillas (tor-tea-as) when I came to the states and started trying different types of food. I love taking regular dishes and making them vegan so I knew I wanted to make a vegetable quesadilla. We went to Bean Vegan Cuisine here in Charlotte one night and I ordered the quesadillas (that just had vegan cheese) and Oliver loved them, so I thought I would try some that we could have for dinner that had ... Vegan Apple Bran Muffins
Oliver has always loved his Banana Oat Pancakes with his cereal every morning but two weeks ago he suddenly started refusing to eat them. I'm used to thinking on my feet (I was an elementary school teacher for almost 8 years) but this time I didn't have to because another breakfast idea was staring at me in the face, literally! Daniel's All Bran Flakes box had a recipe for bran muffins on it so I did what I do best and adapted the recipe to make them vegan and used apple pieces as the fruit ... View the Post
4 Ingredient Chocolate Peppermint Bars: Vegan + Gluten Free
I have loved experimenting with food photography and food styling this last year. I can't believe how much practice really makes progress. It helps that I follow killer food photography gurus like #minimalistbaker and #veggiekins. I absolutely love seeing how other people photograph their food and drinks and get inspiration from them. I look back on the first food photos and even some recently that I just have to laugh and shake my head. I'm not embarrassed, because everyone has to start ... View the Post
How to go Vegan: 5 tips for going vegan
Welcome to 2019 - the year of the vegan (apparently!). It's officially #Veganuary (vegan in January) and a few people have reached out to me to say they are trying to add more vegan meals to their diet so I thought get a post together with some resources that might help. What a great way to start off the year with adding some plant-based meals to your plate. And I do want to say that it is easy to get into the mindset of thinking, "What can't I have as a vegan?" but being vegan for me is truly ... View the Post
Merry Christmas
Getting my little guy to smile by rolling his little car on his back! Just wanted to say a very Merry Christmas to you today. We have always celebrated on Christmas Eve with dinner, reading the Christmas story and opening gifts with pudding. My grandpa would always tell it the best with one of the cousins on his lap, but him and my gran aren't with us anymore so we just tell it ourselves as best as we can, or read it straight from scripture. One year by parents thought it would be fun (it ... View the Post
Breastfeeding: Newborn to past a year
**I am not sharing medical advice, just my breastfeeding journey. Please consult a professional for breastfeeding support.** There are many hidden mysteries about pregnancy, childbirth and parenting that you have to discover for yourselves. Honestly I do know why we don't talk about them with others who don't have kids, unless they ask: It can be a little scary and overwhelming. Having said that, I still don't remember my friends having conversations about tearing, sitz baths, crying babies ... View the Post
Christmas Sugar Cookie Recipe + National Cookie Day
Happy belated National Cookie Day! I can't believe almost every day is National something-or-other-day. I should keep up and save the food holidays on my cell, but I just haven't done that yet! It might give me an excuse to make things I haven't tried before like donuts, brownies, or spaghetti! Who decides on those days anyway? I am so glad that I saw it was National Cookie Day because I was nudged to bake some vegan sugar cookies, my first ever! Actually, I might have baked some when I was ... View the Post
Homemade Hot Apple Cider
How many times do you find yourself looking at the ingredients of something and think, "I can make that myself!?" I do that a lot!!! So, I usually take a picture of the ingredients, write them on my list for the next grocery shop, and find recipes or try make one up. I decided to do that for apple cider because A) I knew my house would smell amazing with apples bubbling in the slow cooker, and B)"Tis the season. I absolutely love all the different seasons because I get to eat and drink ... View the Post
Vegan Apple Cobbler
I honestly can't believe I had to remake a recipe and take out sugar because it was too sweet!!!! Who am I??? I had an incredibly sweet tooth growing up (mostly for chocolate bars, cakes, ice-cream etc.) but becoming a vegan really helped me because I can't just buy a candy bar (or three) in the "isle of temptation" as I check out of the grocery store. I have to go home and bake a treat if I want something yummy and vegan, unless I am at Whole Foods which is not a good idea for our budget so I ... View the Post
