What Vegans Really Eat (Ensley Edition)

6:00am: Riiiise and shine! Alarm clock goes off. Time to rehydrate after sleeping. I shuffle into the kitchen, flick on my electric teakettle, and juice half a lemon. While my water is heating up, I try to down an entire Klean Kanteen of filtered, room temp water so that I can start my day hydrated. Once my kettle water is hot, I pour it, some room temp water, and the lemon juice into a coffee mug and sip away. (Ok fine I chug. Homegirl ain’t got all day.) Time to hop in the shower!

6:15am: Out of the shower. I pour myself a cup of (organic!) coffee with a little almond milk and coconut sugar. Since the rest of my day is super-scheduled, I take a few minutes to sit on the couch and read as I sip my coffee. Gives my hair a chance to dry a little + gives me some non-negotiable “me” time. Pure heaven, I tell you.

 

7:00am: I’ve had my coffee, blow-dried my hair, and slapped some makeup on my face. Mix up a Glowing Green smoothie for my breakfast. It makes enough to fill my Klean Kanteen plus my little Plexus blender shaker. I stick them in my backpack to sip throughout the morning. Sometimes I’ll pop an iron tablet, since the Vitamin C in my smoothie helps me to absorb it. I also mix up a Power Protein smoothie for later.

7:20(ish)am: Head to work.

10:30am: GGS finished, time for some PLEXUS! I mix a Slim in my blender bottle, then pop 2 Xfactors, a few vegan Vitamin D pills, and a Boost. Sounds like a lot but it makes me feel SO good and powers me through my (long ass) afternoons.

12:15pm: My class it at lunch, which means I have approximately 19 minutes to shove food in my face and get anything together I need for the rest of the afternoon. (We don’t get out until 4:15. Please shoot me.) Today, lunch is a hearty salad with organic mixed greens, sprouts, tempeh, and avocado. I also bring an organic apple and peanut butter for a little crunch.. Nom.

 

1:15pm: We all come in from recess and I try to chug another full Klean Kanteen of water. Teachers have to c-a-r-e-f-u-l-l-y time their water consumption, y’all.

3:15pm: The kids head to art/music, etc and I try to drink another Klean Kanteen of water. if I’m craving something sweet or am feeling a little hungry I’ll sip my Power Protein Smoothie while answering emails, planning, calling parents to tell them their children were saying the f-word, etc. Occasionally I’ll have had some of it in the morning, but usually it’s my “dessert” in the afternoon.

5:00 I get home and take another quick sip of water and pop two Biocleanse before I walk Brody.

7:00 Dinnertime. I would love to eat earlier (like 6), in order to have more time to digest my food before I hit the hay, but it just doesn’t work like that all the time. Tonight dinner is Mediterranean pizza with artichokes, olives, onion, and Daiya Mozzarella. We also love taco night, butternut squash soup, and veggie paninis on a regular basis.

9:00 Off to read/scroll on Instagram. I mix the contents of 2 ProBio5s into a little water and kick it back before bed. Sleeping is when your body is regenerating and can best put those probiotics to work!
