Vegan Cucumber Sandwiches

  • 1 loaf white bread de-crusted
  • 1 English Cucumber
  • vegan mayonnaise
  • dill chopped finely
  • chives chopped finely
  • salt + pepper to taste


  • Cut the crusts off the bread and spread the vegan mayonnaise on both sides.
  • Cut very thin slices of cucumber and lay on the bread. Sprinkle the sandwich with chopped dill and chives then grind salt and black pepper to taste.
  • Cut the sandwiches into triangles and serve.
