Veggie Pizza with Vegan Cheese Drizzle

Perfect Friday night-in recipe for the whole family to enjoy.

Ingredients

For the pizza

  • 3 tsp olive oil divided
  • 1/2 onion peeled and diced
  • 1 garlic clove peeled and minced
  • 1/2 punnet mushrooms sliced, 4 oz (about 100g)
  • 4 mini vegan sausages
  • 1 pizza dough I used one from Publix
  • 1/2 cup tomato basil pasta sauce
  • handful baby spinach
  • 2 artichoke hearts sliced finely
  • 2 TBSP sliced olives
  • 1/2 cup pineapple slices

For the vegan cheese drizzle

  • 1/4 cup veganaise
  • 1/2 TBSP nutritional yeast
  • 1 TBSP pea milk
  • 1/2 tsp lemon juice

Instructions

For the pizza

  • Preheat the oven to 425F and place the pizza dough on a pizza baking sheet.
  • Add 1 tsp olive oil into a pan and sauté the onions for 5-8 minutes. Add the garlic for the last 30 seconds. Remove from heat.
  • Add 1 tsp olive oil to the pan and sauté the mushrooms until golden brown on both sides. Remove and set aside with the onions.
  • Add 1 tsp of the olive oil and sauté the vegan sausages until browned on all sides. Remove and cut into round slices.
  • Layer the pasta sauce on the pizza base and add the spinach, onions + mushrooms, sausages, artichoke hearts, olives and pineapples.

For the vegan cheese drizzle

  • Combine the veganaise, nutritional yeast, pea milk and lemon juice in a small cup or bowl. Mix together and drizzle over the pizza.
  • Bake pizza for 18-25 minutes until crust is fully cooked. Enjoy!
