Chewy Chocolate Cookies


  • 1 ¼ cup butter softened
  • 2 cups granulated sugar
  • 2 eggs
  • 2 tsp vanilla essence
  • 2 cups flour
  • ¾ cups cocoa
  • 1 tsp bicarb of soda
  • ½ tsp salt


  • Preheat the oven to 350°F (180°C) and lightly grease a cookie sheet.
  • Cream the butter and sugar in a large bowl with an elecrtic mixer.
  • Add eggs and vanilla and beat well.
  • Add dry ingredients and mix well.
  • Place small balls of batter onto cookie sheet.
  • Bake 8-10 minutes. Don't overbake. They will puff up during backing and then flatten on cooling.
  • Cool on a cookie sheet for 1 minute then place on a cookie rack to cool further.


*Store in an air-tight container for 2-3 days or freeze for up to a month.
